Happy Labor Day! I hope you all have fun plans for the holiday! My family and I are going boating today. I am super excited because I haven’t gone all summer! It should be great:)

If you don’t have dinner plans for tonight, I have a great recipe for you! Do you like stir-fry?? I love it. The great thing about stir-fry is that you can add so many different vegetables. By changing up the vegetables, you can have a whole different meal! Here is my favorite stir-fry recipe:

Beef Steak Stir-Fry

Ingredients

  • Thinly sliced sirloin or petite sirloin steak
  • Thinly sliced vegetables of your choice
    • Some suggestions of veggies to include:
    • Onion
    • Any color peppers
    • Carrots
    • Celery
    • Yellow squash
    • Zucchini squash
    • Cabbage
    • Broccoli Florets
    • Mushrooms
    • Water chestnuts
    • Bamboo shoots
  • If desired, cook 1 package oriental flavored ramen noodles as package directs but do not add the seasoning . Drain water and set aside.

Directions:

Heat 2 TBSP canola oil in a wok or an electric skillet til hot. Add steak, stir fry until desired doneness. Season with salt, pepper, and a little garlic powder and ground ginger. Remove meat to a plate.

If needed add 1 more TBSP canola oil to pan and heat. Stir fry veggies til tender but not soft. Lightly season with salt and pepper. Return meat and noodles to skillet.

Make a sauce of 2 cups water, the seasoning packet from the ramen, 1/4 cup soy sauce, 1 TBSP cornstarch. If the flavor is not strong enough or you prefer to omit the ramen, season with beef bouillon. Stir to dissolve the cornstarch. Stir sauce into meat and veggies. Continue to stir til sauce comes to a boil and thickens slightly.

Serve over brown rice.
