Happy Saturday everyone! I hope you have some fun plans for the weekend! I am flying from Utah to New York today which isn’t really too fun with a 2 year old haha. She actually is a very good flyer, thank goodness, so hopefully all will go well!
Today I am bringing you one of the easiest healthy snack ideas ever. This is great for an after school snack or would be cute for an easy finger food at a party.
All you need is 3 ingredients and you will probably have all 3 at home already! It is a great way to use up any extra bananas that you are worried may go bad.
Peanut Butter Banana Bites
Bananas sliced into circles
Peanut butter (almond butter would be awesome too!)
Melted dark chocolate (I just use dark chocolate chips. See * below on instructions to melt)
Spread peanut butter on a slice of banana and top with another banana slice (like a sandwich). Dip into melted dark chocolate or drizzle chocolate over the top. Lay out dipped bananas in a single layer on wax paper and place in freezer until chocolate is hardened.
*To melt dark chocolate chips: place in microwave safe dish. I like to add just a tiny bit of butter or crisco to make it smooth-just a TINY bit though, you shouldn’t taste it at all! Microwave for 20 seconds, then stir. Repeat until chocolate is smooth when stirred. Stop as soon as it goes smooth-it will burn easily.
