Hey guys! Can you believe that summer is already coming to an end?! What the heck?! It went by way too fast for me! One of my FAVORITE summer salads is this berry salad. It just screams summer to me haha It’s super fresh and light, and soooo good! Yum. I make it way too much…my family is probably sick of it by now, but it’s my fav so it will probably keep showing up on the table haha This salad is an awesome side dish, or entree. It is awesome served with grilled chicken, or pecan crusted chicken (don’t worry, recipe coming soon!), or just by itself. You can also throw more fruit than just berries on it. I have added apples, nectarines, mandarin oranges…the possibilities are endless! I always say, the more fruit it has on top, the better!

I have used a few different dressings on this salad. So far, my favorite bottled dressings for this salad have been Trader Joes Champagne Pear Vinaigrette dressing, and Brianna’s Poppyseed dressing. I found this great FRESH strawberry vinaigrette dressing recipe on Instagram from @cleanfoodcrush the other day. It is soo easy and super light and healthy. It is great on this salad also. This recipe is found on the bottom of the page:)

Berry Salad Ingredients:

  • Fresh Strawberries
  • Fresh Raspberries
  • Fresh Blueberries
  • Apple (Optional- I like using Pink Lady, Jazz, or Honeycrisp. Granny Smith would be good too)
  • Canned Mandarin Oranges (Optional)
  • 1/4 cup Craisins (I use reduced sugar and yes, they are still REALLY good:) )
  • 1/4 cup Cashews
  • 1/4 cup feta cheese
  • 1 head of Romaine Lettuce (can also use spinach)

Wash and dry lettuce then chop. Put in bowl. Dice apples and layer on top of lettuce. Layer mandarin oranges on top of apples. Slice strawberries and layer on top of oranges. Place raspberries and blueberries on top of strawberries. Sprinkle nuts, craisins, and feta cheese on top. Serve! You can either mix dressing into the salad, or serve it on the side…whatever you prefer! If you mix the dressing into the salad, do it right before you serve it so the salad doesn’t get soggy. Also, if you would like to make it into more of an entree, add grilled chicken to it! It’s yummy that way too:)
