So on Monday I posted a recipe for Caprese salad. After I made the salad, I still had a bunch of mozzarella and basil leftover, so I decided to make a Caprese panini! Super simple, good, and an easy way to use that extra mozzarella and basil before it goes bad.
- 2 slices of 100% whole wheat bread
- (optional): thin layer of basil pesto spread
- 2-3 medium slices of fresh mozzarella cheese
- 4 slices of fresh tomato
- 8-10 basil leaves
- 2 tsp balsamic vinegar
- can add any vegetables you would like:) I added spinach to mine.
- Salt and pepper
Spread a thin layer of pesto on one slice of bread. Layer mozzarella and tomatoes on same slice of bread. Pour balsamic vinegar on top of the tomatoes, and then add basil leaves. Add any other veggies you would like. Add salt and pepper. Put other slice of bread on top. Place sandwich in a panini maker or George Foreman grill. Cook until cheese is melted. If you do not have a George Foreman or panini maker, you can make it like a grilled cheese- in a fry pan:) Tip: before cooking the sandwich, flip over so the cheese melts over the veggies.
