Do you ever have those days where you just don’t feel like cooking, especially a big meal? I definitely do! A very simple go-to meal for my family and I are omelets. They are very easy to make and you can change them up however you would like. The cool thing about omelets is that you can add as many veggies as you would like to make them extra healthy and filling!


Here is my Veggie Omelet Recipe. It is loaded with nutrients and it tastes fabulous! You can also add any other veggies you want, or if you want to add meat, you can do that too.

2 eggs (or 1 egg and 2 egg whites)
1/2 TBSP milk
Salt and pepper (I don’t measure, just put a little bit in)
Mild cheddar cheese (or any cheese you would like)
Red bell peppers

Mix together eggs and milk in separate bowl until yolks are fully mixed. Add salt and pepper. Spray small frying pan with cooking spray. Pour egg mixture into pan. Cook until both sides are cooked through. Add cheese and all veggies except tomato and avocado for last few minutes of cooking. Add tomatoes and spinach and then fold omelet in half. I like to serve mine with salsa. Put on a plate and enjoy!
