I love chicken salad, especially in the summer! It is so versatile. You can change up the ingredients you put in it and you can eat it a bunch of different ways, such as; in a whole wheat wrap, on lettuce, on half an avocado or half a tomato, or on whole wheat bread (or just out of the bowl with a fork….haha).
Although I love it, chicken salad is not the healthiest of meals since it is loaded with mayo. Well, you are in luck because I found a healthier option! Using greek yogurt instead of mayo cuts down on a lot of the fat, and although it tastes slightly different, it is still amazingly good.
I have done it two ways. I have used greek yogurt in place of all the mayo, and I have used half greek yogurt and half mayo. I prefer the half and half way, but if you don’t want the fat of the mayo than the all yogurt was great too! If you use all yogurt, add more honey to compensate for the tartness of the yogurt.
Chicken Salad with Greek Yogurt
2 cups chopped or shredded cooked chicken breast
1/4 cup plain greek yogurt
1/2 TBSP honey
1/4 cup light mayo
1/2 cup grapes
1/4 cup cooked peas
1 stalk chopped celery
1/3 cup sliced almonds
1/3 cup grated cheddar cheese
2 chopped green onions
Salt and pepper to taste
Mix yogurt, honey, and mayo together until blended. Mix all other ingredients and pour yogurt mixture on top. Stir until coated. For best results, refrigerate for a few hours prior to serving.
