My momma is an amazing cook! My husband and brother-in-laws can agree with that… all of them gained a few extra pounds when they started coming around from all of the yummy dinners and treats that she made! One dinner that I have always loved is her vegetarian chili. Whenever anyone tries it, they always love it and want the recipe. It seriously is the best chili that I have ever tasted! I love that it is simple and healthy. It is loaded with veggies and has tons of protein and fiber from the beans… beans are the magical fruit ya know! Haha I hope you and your family enjoy it as much as I do.:)

Ingredients:

  • 1 green pepper, seeded and chopped
  • 1 white onion, chopped
  • 1-2 ribs celery, chopped
  • 1 anaheim pepper, seeded and finely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • Minced garlic
  • 2-15oz cans chili beans
  • 1-15 oz can great northern beans, rinsed and drained
  • 1-15 oz can black beans, rinsed and drained
  • 1-15 oz can diced tomatoes including juice
  • 1-8 oz can tomato sauce
  • 1c water
  • 1 pkg chili seasoning
  • 1 1/2 cups frozen corn

Place green pepper, onion, celery, anaheim pepper, jalapeno and garlic in a crockpot.

Next add all of the beans, tomatoes, tomato sauce, water and chili seasoning.

Stir altogether. Cover. Heat for a couple of hours on med heat until hot throughout and veggies are tender. Add the corn the last 1/2 hour of cooking.

Serve sprinkled with shredded cheese, chopped avocado and a spoon of sour cream.
