Today I am bringing you guys another healthy recipe I think you all should definitely try. Veggie and Bean Quinoa Salad is a great recipe if you are just starting to use quinoa or don’t really like quinoa but want to give it another try. It does not taste like your normal quinoa dish which my husband loves because he is not a huge fan of its original flavor by itself. Besides getting the health benefits of quinoa in this dish it’s also full of tons of delicious vegetables and beans. So all around it’s a very healthy, filling, and tasty dish you will love.
(This recipe makes about 8-10 servings, I use this as a meal prep recipe for the week and like having a big quantity of it, but you can do your own measurements for how much you would like.)
1 cup quinoa (washed and drained)
2 cups water
1 can black beans (washed and drained)
1 can corn
1 tablespoon lemon juice
1 teaspoon cumin
salt and pepper to taste
1.Wash your quinoa in water and then drain it. Then cook quinoa with water on your stove top following packaging directions.
While quinoa is cooking cut up vegetables and place your squash and asparagus in a frying pan with a small amount of olive oil to simmer
Once quinoa is done cooking but before you cover it and let it sit, add in lemon juice, cumin, and whatever other seasonings you would like. Also add in corn, beans, and cooked veggies. Stir everything together and then cover with lid and let sit for 5 mins.
While quinoa is siting being covered, cut up your tomato and avocado, and then stir it into quinoa mixture once the 5 minutes are up.
