DSC_0300What are your plans for dinner tonight? You should be saying “Coconut Chicken of course!” :) This recipe has been one of my family’s favorite chicken recipes of all times. I love the taste of coconut and having your chicken breast covered in it and then baked is just heaven for me. It is easy to make and healthy so it can’t get any better than this. I originally found this recipe from seeded at the table but have since made some changes of my own to it to make it healthier.

Coconut Chicken


Yield: 4 servings

1 egg
1 cup sweetened coconut flakes
1/4 cup whole wheat flour
1/4 cup wheat germ
2 teaspoon’s flax seeds
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
4 boneless chicken breasts
1/4 cup unsalted butter, or coconut oil (melted)
Optional for apricot sauce on top:
1/4 cup apricot preserves
2 tablespoons Dijon mustard


Preheat oven to 400*F and line a baking dish with parchment paper.

Whisk egg in a medium size bowl and set aside. Then mix all the dry ingredients in a separate larger bowl; coconut flakes, flour, wheat germ, flax seeds, garlic powder, salt, and pepper.

DSC_0292Working with one chicken breast at a time, dip the chicken in the beaten egg and then coat with the coconut mixture. Place on baking dish and repeat with other chicken breasts.

Once all the chicken breasts are coated and placed on the baking dish, evenly drizzle with melted butter or coconut oil. (You need this so the coconut mixture does not burn while cooking). Place in oven and bake for 30-40 minutes flipping chicken breasts once halfway through cooking time. (tip: use a spatula to do the flipping so you don’t lose the coconut mixture that is on the bottom of the chicken).

DSC_0296If you want to add the apricot sauce for topping when the chicken is done, you need to mix the apricot preserves with the mustard in a small bowel. Place in refrigerator to chill until ready to serve.

For the side dishes I made rice or quinoa to go under the chicken and I also sauteed some fresh vegetables on my stove top in a little olive oil with some seasonings.
